Ice Cream Sandwiches

Use 2 cookies (any kind) and 1 scoop of ice cream (any flavour) per cookie sandwich.

Gently soften the ice cream for no more than 10 seconds in the microwave. This will make it easier to spread.
Spread the ice cream on the bottom side of one cookie, and then top it off with the second cookie.
